Ingredients:
- 1 tsp ground Chinese five spice
- 2 tsps ground cumin
- 2 tbsps Chang’s Hoisin Sauce
- 2 tbsps Chang’s Sesame Oil
- 4 x 200g skinless chicken breast fillets
- 11/2 cups couscous
- 250g mixed medley tomatoes or cherry tomatoes, chopped
- 2/3 cup mint leaves, torn
- 2/3 cup coriander leaves
- 1 packet Chang’s Original Fried Noodles
- 1/2 cup Chang’s Oriental Salad Dressing
Method:
- Combine five spice, cumin, sauce, oil and chicken in a large bowl and mix well to combine. Refrigerate, covered, for 20 minutes.
- Heat a chargrill pan over medium-high heat and cook the chicken for 5 minutes each side until golden and cooked through. Set aside and keep warm.
- Cook couscous according to directions on packet. Combine couscous, tomatoes, mint, coriander and noodles together in a large bowl. Serve with the chicken and drizzle with dressing just before serving.
