Ingredients:
- 1 packet Chang's Original Fried Noodles or Chang's Gluten Free Fried Noodles
- 180g Medjool dates, seed removed (12 large dates)
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1/3 cup desiccated coconut, extra for rolling
Method:
- Place Chang’s Fried Noodles into a food processor and pulse until roughly chopped and resembles bread crumbs. Remove and set aside.
- Roughly chop the dates and add them to the same food processor along with the maple syrup and vanilla. Blend until broken down.
- Scrape the sides of the food processor bowl and then add the Fried Noodles and coconut. Continue to blend until well combined.
- Roll the mixture into balls and roll in extra coconut. Store in the fridge for when required.
Can also be eaten immediately as does not need chilling time to set.
