Ingredients:
- 200g lettuce salad mix
- 16 large cooked prawns, peeled, tails kept intact
- 1 dragon fruit, peeled and cut into cubes
- 1 red onion, thinly sliced
- ½ packet Chang's Original Fried Noodles, Chang's Crunchy Fried Noodles or Chang's Gluten Free Fried Noodles
Optional: fresh mint leaves
Sauce:
- ¼ cup Chang's Crispy Noodle Salad Dressing
- 3 tablespoons fresh lime juice
- 1 tablespoon avocado oil or light olive oil
Method:
- Prepare prawns, onion and lettuce and place into large mixing bowl.
- In a small bowl combine the dressing ingredients, whisk well and pour over salad.
- Top with dragon fruit, choice of Chang’s Crispy Fried Noodles and mint. Serve immediately.
