Ingredients:
Apple Mixture:
- 6 large green apples, peeled, cored and diced 2cm cubed
- 2 tablespoons lemon juice
- 1 tablespoon caster sugar
- ¼ cup water
- ½ teaspoon cinnamon
- ½ teaspoon nutmeg
Topping:
- 1 packet Chang's Original Fried Noodles
- 1 cup oats
- ½ cup brown sugar
- 120g salted butter, melted
Method:
- Preheat oven to 160C fan forced.
- In a saucepan add the apple mixture ingredients and over medium heat bring to boil, then reduce heat and simmer, stirring frequently for 5 minutes or until apples are slightly softened. Pour the apple mixture into an oven safe baking dish.
- To make the topping, place the noodles in a food processor, and pulse until chopped but not pulverised (alternatively place into a food bag and using a rolling pin, break into small pieces). Next combine all the topping ingredients and mix well.
- Sprinkle topping over apple mixture and bake in the oven for 20-25 minutes.
- Allow sitting for 10 minutes, then serve with ice cream, custard, vanilla yogurt or on its own.
